They work great with any cookware that responds to magnets, e.g. cast iron, stainless steel, or newer induction-ready cookwear. If you are shopping for pans at Goodwill, just check and see if a magnet will stick to the bottom.

Advantages of induction cooktops include EXTREMELY fast and efficient heating. Boils water for pasta in about half the time of a gas stove because the "induction" is magnets spinning very fast to heat the metal in the pot, which heats the water directly. There is no heat waste to the air, and no burnt gas fumes. This is a really great option for an unvented cooking space, for people who like to cook fast with a minimum of fuss, or for anyone who finds they are sensitive to the by-products of cooking with gas. I borrowed my first induction cooktop from the SLO library to see if it would help stop my husband's coughing fits every time I turned on a gas burner - now I have 2 burners I use 2-3 times/day and I don't know how I ever managed with gas. I just got a new induction-type square griddle for cooking pancakes and burgers, which means the only thing I use my gas stove for is the oven!
